  • 2 medium zucchinis
  • 4 ripe tomatoes

  • 2 tbsp extra virgin olive oil
  • A generous handful of fresh basil leaves
  • 3 tbsp heavy cream (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

  1. Make the tomato sauce (see instructions below). Keep it warm.
  2. Sauté the zucchini: Slice into thin ribbons and sauté in garlic-infused olive oil for 3–4 minutes.
  3. Add the sauce: Combine the tomato sauce with the zucchini and keep over low heat.
  4. Cook the pasta: Boil the tagliolini for 4:30 minutes in salted water. Drain well.
  5. Combine and serve: Toss the cooked pasta into the sauce. Serve hot with fresh basil and grated Parmesan if desired.
